Professional Patisserie & Confectionery Level 2

This practical course is the next step towards an exciting career in Catering.

You will have hands-on experience of working within professional kitchens and producing baked goods for sale.

During the course, you will learn the basic skills needed in the patisserie world, working with cakes, chocolate, sugar and understanding working in the Hospitality industry. You will also study for your Food Safety and Health & Safety qualifications.

In addition, you will be taught how to produce pastry and fermented goods, hot and cold desserts and a range of petit fours to create the perfect afternoon tea.

All students are expected to complete a 1 week industry work experience placement.

How will I be assessed?

This course is assessed through the combination of a portfolio (with photographic evidence), skills tests and synoptic tests.

What do I need?

You will need to have achieved at least 4 GCSEs at Grade 3 and above, including English and Maths. It is a requirement, however, that you retake GCSE English and Maths as part of your programme, if you do not have Grade 4. This will ensure you can progress to a Level 3 course or apprenticeship, and will improve your future employment prospects

Where can it take me?

You could progress to Level 3 Professional Patisserie & Confectionery or move across to Level 2 Professional Cookery.
